1 lb. ground chicken
3 cloves garlic, finely grated
1 T. fresh ginger, finely grated
4 scallions, thinly chopped
1 T. soy sauce
1/2 c. chicken stock
lime wedges, for serving

Directions:
Directions:
mix all ingredients in a medium bowl. Form meatballs 1 in. in diameter. Brown in a large skillet with 2 T. olive oil, about 10 min. Transfer to a plate.

Serve with lime wedges and dipping sauce or add to soup. For soup, sauté bok choy int he same pan after the chicken, 5 min. Add 3 c. chicken stock. Serve meatballs, bok choy and soup in bowls, top with scallions and a squeeze of fresh lime juice.
