1 pkg. active dry yeast
2 cups plus 2 tbsp. warm water
1/2 cup oil
1/4 cup sugar
1 egg, slightly beaten
4 cups self-rising flour

Directions:
Directions:
Combine yeast and 2 tbsp. water; let stand 5 minutes. Combine yeast mixture, remaining 2 cups water, oil, sugar, egg and flour. Stir until smooth. Cover & refrigerate at least 4 hours or up to 3 days. Stir batter and spoon into greased muffin pans, filling 2/3 full. Bake at 400º for 20 to 25 minutes. remove rolls from pan immediately.
