8-9 medium to large potatoes
4 hard boiled eggs, sliced
1/3 cup chopped sweet pickles
1 large onion, chopped

dressing:
1 egg
2 1/2 tbsp. sugar
1/4 tsp. salt
1/2 cup vinegar
1/2 cup water
1/4 tsp. paprika
2 tsp. cornstarch
1/4 tsp. celery seed

Directions:
Directions:
Boil potatoes until tender. Cool, peel and cube. Place potatoes, hard boiled eggs, pickle and onions into large bowl.
Mix dressing ingredients in sauce pan and bring to a boil on medium heat. Stir constantly with whisk until bubbly and thick.
Pour over potatoes, mixing well. Chill over night for best flavor.
