3 medium oranges
1 beaten egg
2 Tbsp. oil
2 c. flour
3/4 c. sugar
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 c. coarsely chopped fresh or frozen cranberries
1/2 c. chopped walnuts
1 c. sifted powdered sugar

1. Lightly grease one 8"x4"x2" loaf pan or three 6"x3"x2" pans.
2. Shred peel from 1 orange, reserve. Squeeze juice from all oranges. Measure 3/4 cup juice. Reserve remaining.
3. Combine the 3/4 cups juice, 1 tsp. of the peel, egg, and oil. Stir together the flour, granulated sugar, baking powder, salt, and soda. Add orange mixture. Stir just till moistened.
4. Fold in cranberries and walnuts. Turn into prepared pans. bake 350 degrees for 50-60 minutes for large pan, 30-40 minutes for small pans until toothpick comes out clean. Cool 10 minutes then remove from pans to complete cooling.
5. Glaze: Blend 1 Tbsp. reserved orange juice with powdered sugar. Add more juice to make drizzling consistency. Drizzle atop cooled loaves, Sprinkle with reserved orange peel.

I used to bake these at Christmas to give to the neighbors for their Christmas morning breakfast. Makes good muffins too.
