Terry's Pina Colada CREPES Recipe

• 2 Eggs
• Ό cup Sugar
• dash Lemon
• Ύ cup Flour
• 1 ½ Tbsp. Malibu Rum
• 1 cup Milk (could sub ½ cup of cream)
• 2 Tbsp. Butter – melted
• 1 tsp. Vanilla

• ½ cup Butter
• ½ cup Malibu Rum
• ½ Pineapple juice
• 6 Tbsp. Sugar – less if brown sugar
• Ό cup Brandy to flambι

Crepes: Combine egg and sugar…then add flour etc. Let stand 10 minutes before making crepes. Use wax paper to separate the crepes.

Sauce: Over heat combine all sauce ingredients in non stick pan. Cook over gentle heat until thickened, stirring constantly.
