3 large baking potatoes
1/4 c cooking oil
Paprika
Salt
Pepper
Grated Parmesan cheese, optional

Directions:
Cut potatoes lengthwise into quarters. Blot cut edges with a paper towel. Pour oil into a 13 x 9 baking pan, tipping pan to coat the bottom. Place potatoes in pan. Turn to coat evenly with oil, leaving cut side up in a single layer. Sprinkle with paprika, salt and pepper. Bake at 425º for 30-40 minutes or until fork tender. Sprinkle with cheese, if desired, during last 3-5 minutes of baking. Serve with sour cream or ranch dressing.
