I pound crawfish (or you can use either, chicken, shrimp and crab)
1/4 cup canola or vegetable oil
1/2 cup onion chopped
1/2 cup bell pepper seeded and chopped
1/2 cup celery chopped
1 teaspoon minced garlic
1 can tomato sauce
1 can Rotel tomatoes, drained
salt and Cajun seasoning to taste

Directions:
Directions:
In a large pot add oil and heat over medium-high heat, add onions, bell pepper and celery. Saute' till onions are clear, add garlic tomato sauce and Rotel tomatoes. Bring to a simmer and add crawfish and seasonings, stir, cover and return to a simmer. If you are using shrimp wait until the last 10 minutes to add them so you don't over cook them.

Serve over cooked rice
