1 clove garlic, minced
Salt pork, diced
1 chicken broiler, cut up
1 lb. sweet Italian sausage
1 1/2 lb. lobster (optional)
1/4 cup olive oil
1 large onion, chopped
1 green pepper, chopped
4 tomatoes, sliced
1 1/2 cups raw rice, long-grain
1 can (14oz.) chicken broth
1 tsp. paprika
1 lb. raw shrimp, shelled and deveined
20 small clams in shells, steamed
1 lb. fresh peas or 1 pkg. frozen
1 can pimentos, diced (4 oz.)

Scrub clams or mussels well with brush under cold running water.
Heat oil and add salt pork and saute 10 minutes. Add lobsters and cook till red. Add chicken and sausage and fry 5 more minutes. Add onions, pepper, and tomatoes and cook for a few more minutes. Add rice and enough stock to cover. Add saffron, salt, pepper and paprika and cook 10 minutes. Add clams and shrimp, adding more liquid if necessary. Add peas and cook till rice is tender. Add pimientos. Serve hot.
