5 Medium Apples
4 Tsp. Sugar
2 Tsp. Cinnamon
4 Eggs
2 Cups Sugar
1 Cup Oil + 1 tsp. more
3 Cups Sifted Flour
3 Tsp. Baking Powder
1/2 Tsp. Salt
1/2 Cup Orange Juice

Grease & flour 9 in. tube pan. Quarter, core, peel & slice apples. In a separate bowl, mix 4 tsp. sugar & 2 tsp. cinnamon. Mix cake batter, beat eggs thick, then gradually beat in sugar and then the oil. Resift flour with baking powder and salt; Add to beaten egg mixture alternately with additions of orange juice. Beat in one tsp. vanilla
Pour 1/4 of the batter in prepared pan. Arrange 1/3 of the sliced apples over top & sprinkle with 1/3 of sugar-cinnamon mixture. Then add another 1/4 layer of batter over apples and arrange 1/2 remaining apple slices over it with a sprinkling of half the remaining sugar-cinnamon mixture. Cover layer of apples with half remaining dough, place remaining apples over with sugar-cinnamon mixture. Bake for 1 1/4 hours at 350º
