1 box Pistachio instant pudding - Jello brand or any brand
1 can crushed pineapple (do not drain)
1 regular size Cool Whip
May add nuts, chopped pecans or pistachios
May add 1-2 cups of miniature marshmallows
May garnish with marichino cherries (liquid dried off)

Directions:
Directions:
Stir the pistachio pudding and crushed pineapple together until all pudding is dissolved.
Fold in Cool Whip
Fold in nuts and marshmallows if adding.
Garnish with a few red marichino cherries that have been allowed to drain and dry on a paper towel.
Pretty served in a glass bowl for Christmas.

The name Watergate Salad became popular because the recipe was published in the early 70's during the "Watergate" scandal of President Richard Nixion. The scandal occurred at the Watergate Hotel in Washington D. C. In the late 70's Jim and I visited my Aunt Betty Sue Johnson in Washington. They took us to the the Watergate Hotel to have lunch while touring around the city. Awesome experience since my mother loved living and working in Washington D. C. I loved hearing about their life stories which inspired me to do "more
in my life."
