1/2 cup cooking oil
1 egg
2 tsp. lemon extract

Mix together. Drop by teaspoonfuls on greased cookie sheet. Bake 350 for 10-12 minutes.

Can substitute lemon cake mix instead of yellow cake mix. For an almond flavored sugar cookie, try using almond extract instead of lemon extract.
