Pepper-Beef Stir Fry Recipe

1 (5-oz.) package Japanese curly noodles (chuck soba) or 5 oz. ramen noodles (without seasoning packet), uncooked
1/3 cup lite soy sauce
1/4 cup beef broth
3 TBS. dark brown sugar
2 tsp. cornstarch
1 TBS. vegetable oil
3/4 lb. top round steak, thinly sliced
2 tsp. sesame oil
2 garlic cloves, minced
1 red bell pepper, cut into thin strips
1 (8 oz.) can clicked water chestnuts, drained
3 oz. snow peas, trimmed

1. Cook noodles according to package directions; drain and keep warm.
2. Meanwhile, combine soy sauce and next 3 ingredients in a small bowl; stir well with a whisk. Set aside.
3. Heat vegetable oil in a large nonstick skillet over medium-heat until hot; add beef. Stir-fry 5 minutes or until browned. Remove beef from pan; set aside, and keep warm.
4. Coat skillet with sesame oil. Add garlic and bell pepper; stir-fry 2 minutes. Add water chestnuts and snow peas; stir-fry 1 minute. Return beef to skillet, and add soy sauce mixture; cook 30 seconds or until slightly thickened. Serve over noodles.

i sometimes substitute white rice instead of using the Japanese curly noodles. Also, the night before I sometimes marinade the meat in the soy sauce mixture for extra flavor. (Can also add mushrooms & onions.)
