1 lb. boneless chicken breasts
1 28-oz. can crushed tomatoes
2 large peppers (I like one green, one red)
1 onion
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon salt
pepper

Directions:
Directions:
Melt butter in large skillet on top of stove. Trim boneless chicken to remove any skin or tendons. Cut chicken into 1 inch pieces. Add chicken to butter and brown on all sides. Add one can of crushed tomatoes to chicken, along with one teaspoon of salt and 1/4 teaspoon of pepper and stir. Cover and cook for one hour over low heat, stirring occasionally.

Slice peppers and onions and brown in the skillet in olive oil. After chicken has cooked for an hour, add browned peppers and onions and continue to cook chicken for another half hour or so over low heat. Stir occasionally to make sure sauce is not sticking to pan.

Makes plenty of tomato sauce - serve with white rice or noodles and vegetable or salad. Great with Italian bread also. Can make in crockpot -- after browning chicken and vegetables, add them together with rest of ingredients to crockpot and cook on low heat all day.
