Ingredients: 3 - 1 lb loaves of sliced white bread, cut into cubes 1 bunch celery, diced (do not use leaves or very center of celery stalk) (approx 4 cups) 3 large sweet white onions, diced (approx 4 cups) 2 sticks (1 cup) butter 2 1/2 cups Turkey drippings 1 - 32oz container chicken broth (may need more depending on how dry bread is) Salt Pepper Sage

Directions:This makes approximately 2 - 9x13 pans.
Slice bread into cubes and place in a large pan a couple days prior to making dressing to allow bread to dry out.
In a large skillet, melt butter and saute celery and onions until they are tender and onions are translucent.
In a bowl large enough to hold entire mixture, put bread cubes. Pour turkey drippings onto cubed bread. Add in sautéed celery and onions and turkey drippings and stir. At this point, begin pouring in broth until the bread is thoroughly saturated and wet. Add salt, pepper and sage to taste. Place in a baking dish,cover with aluminum foil and bake at 350 degrees for about an hour. Remove foil and continue baking until the top is nicely browned. Allow to cool slightly before serving.
It's best to put a cookie sheet under the dish as the dressing tends to raise while it bakes and sometimes the grease will spill over the sides. Once it's baked, if the dressing is too "liquidy" (almost like a pureed texture), cube some additional bread and stir in until dressing reaches desired consistency. |

Notes: This recipe originated with Gene Mullins. He always made a wet dressing while our Grandma Yelton's was dry. The difference? Grandma's needed gravy, this one does not. Mom loved this dressing. She would even eat the leftovers cold right out of the refrigerator. Another way she liked to fix the leftover dressing was to take an ice cream scoop and scoop the dressing into balls, place them on a baking sheet, and re-bake them at 350 degrees until all the sides were nice and golden. It's delicious and leftovers will also freeze well for a later date. Just thaw and reheat.
