Apple "Pie" Recipe

5 or 6 large cooking apples or
4 cups of dried apples
Sugar (brown or white)
Water
3 c self rising flour
1 c shortening
Ice water, about 3 to 4 Tbs per cup of flour

Preheat oven to 450º. Grease a 9x9 square pan.

Pare, core and slice apples. Place in a heavy saucepan, adding sugar to taste and just a little water. Cook until apples have the consistency of chunky applesauce. Set aside to cool. If using dried apples, add water and cover with lid. This steaming process will cook the apples more quickly. You will need to add more water from time to time. Once apples are cooked, add sugar to taste

For crust: Work shortening into flour until mixture becomes crumbly. (Crumbs should be about the size of small peas.) Add ice water, one tbsp at a time, until the dough reaches a good consistency. Divide dough into three parts. On a lightly floured surface, roll out one third and place it into the bottom of pan. Put into hot oven and brown dough, about 10 minutes. Once browned, remove from oven and spread with 1/2 of the cooked applesauce mixture. Repeat this procedure for the second layer of dough. Once browned, top with remaining applesauce. The third layer of dough can be rolled out and cut into strips or placed as an entire piece. Brown in oven.

This is Mom's version of Grandma Deaton's Apple Pie. This "pie" develops its flavor as it sits. It is better if it is made the day prior to when you wish to serve it. Sometimes Grandma would make this in a cast iron skillet. If you want to serve it this way, use about a 10 inch cast skillet.
