4-5 large potatoes, washed and unpeeled
2 tablespoons butter
2 tablespoons olive oil
1/4 cup Parmesan cheese
salt
pepper

Directions:
Directions:
Preheat oven to 350 degrees.

Put two tablespoons of butter in glass baking pan and put in oven to melt. Wash and dry potatoes, and cut into quarters (or eights if very large). Remove pan from oven, add 2 tablespoons olive oil to melted butter and mix. Sprinkle Parmesan cheese over butter on bottom of pan.

Place potatoes cut side down on top of butter and sprinkle well with salt and pepper. Bake in oven until brown and crispy, about 1 hour.

Great with steak or grilled ham steaks! Can adjust amount of Parmesan cheese to your taste. These take at least an hour to cook, sometimes 1.5 hours. Can also use red potatoes.
