Crust:
2c pecans
2tbsp butter, melted
3 pitted Medjool dates, chopped

Pie filling:
1 1.5oz. package Jello sugar free/fat free instant pudding and pie filling
(Jello brand works best)
21/2c fat free milk (soy milk will not set)
Sugar free whipped topping, optional

Directions:
Directions:
Heat oven to 350º
In a food processor, finely chop pecans. Slowly add butter and dates. Continue to process until dough like consistency.
Press pecan mixture into 9in. pie pan and bake in oven until edges of crust lightly browned (about 8-10min.).
Cool crust to room temperature (best cooled in refrigerator or freezer).
Mix pudding powder with milk until thickens (a whip with whisk works best).
Pour pudding into crust and refrigerate until firm, about 1hr.
Cut and Serve, with sugar free/fat free whipped topping if desired.
