5 cups flour
1 tsp. baking soda
1 tsp. salt
2 tsps. Ginger
2 tsps. Cinnamon
1 tsp. nutmeg
1 tsp. cloves
1 cup solid shortening
1 cup sugar
1 1/4 cups unsulphered molasses
2 eggs, beaten

Icing:
3 egg whites
3 1/2 cups Confectioner’s Sugar
3/4 tsp. cream of Tartar
1/2 tsp. vanilla or 1/4 tsp. almond extract

Beat egg whites till firm peaks. Add all of the other ingredients till “glue” consistency.
Use immediately.

1. Thoroughly blend flour, soda,salt and spices.
2. Melt shortening in pot. Add sugar, molasses, and eggs. Mix well and cool.
3. Add the dry ingredients and mix well.
4. Preheat oven to 350°F.
5. Turn mixture onto lightly floured surface. Knead mixture by hand. Add a little more flour if necessary.
6. Roll out dough to about 1/8” to 1/4”. Cut out house parts.
7. Bake 6 to 15 minutes, depending on thickness.
Do not burn!
8. When cool, glue houses together with gingerbread icing.

You can use the following house template or make up your own. I rarely used the "base" part of the template, but instead, placed and "glued" the house directly onto a tinfoil wrapped square or circle of heavy cardboard. I usually made a different style each year. Sometimes I would cut a circle window and add crushed candy for a stained glass look! The possibilities are endless on designing a gingerbread house - you could even make one the resembles your own house!

To finish, sometimes I would add a string of lights inside or a small tealight!
Some years I made up to 45 large houses! In fact, one year I made houses for ALL of the students in a school where I taught art. The students had a blast!

Everyone always looked forward to gingerbread day—especially Mom and MomMom! It's a day of fun and feasting! There is always an assortment of good food in addition to all of the gingerbread! It's a tradition my family always gets excited about!
