olive oil
garlic cloves
sweet bell peppers, (use lots of color!)
fresh basil leaves
feta cheese

Parboil potatoes, cut into large chunks. Fill the bottom of whatever size pan you would like with potatoes and a handful of garlic. 3 lbs of potatoes is about right for a 13x9. Toss with olive oil and dot with butter, salt and pepper to taste. Roast at 450º until soft, brown and crispy, about 45 minutes. Check and stir every 15 minutes. Cut up peppers, and toss with potatoes, roast another 15 minutes. Remove from oven and top with a sprinkle of feta and a handful of fresh basil leaves.

This is more of an idea than a recipe. I started making this dish and it sort of evolved and changes every time I make it. It is a beautiful dish with ingredients fresh from the garden. I have made it for team dinners and wedding events. It holds really well in a chafer, just remember to add the fresh basil right before serving.
