1 16-20 oz can salmon, drained
1 egg, beaten
10 saltine crackers, crushed

In a bowl, mix salmon and crackers. Stir in beaten egg. Form into patties--should get 5 or 6.

Heat a skillet with about a 1/4 in oil. Fry until golden on each side.

When we had this meal at home, Mom would always fix macaroni and cheese and heat up a can of dark red kidney beans as sides. Be sure to add about a tablespoon of butter to the beans and let them cook until the juice thickens. This was one of Dad's favorite meals.
