3 1/2 lb beef chuck roast
1 lg onion, diced
1/2 c celery, diced
2 tbsp brown sugar
4 tbsp lemon juice
1 c ketchup
3 tbsp Worcestershire sauce
1 tsp chili powder (mild)
1 1/2 c water

Directions:
Directions:
Preheat oven to 350º.

Place chuck roast in a deep baking dish (3 or 4 quart casserole.)

In a large bowl, add remaining ingredients and stir until combined. Pour over roast. Cover dish tightly with aluminum foil and bake for 3 1/2 hours.

This is best if cooked the day before and refrigerated over night as the fat can congeal and be removed. Then reheat and when beef is warm, shred and mix in sauce and serve. If you cannot refrigerate, then take roast from the oven, shred and return to sauce and serve.

Mom got this recipe from her friend, Carolyn. It's one they used in the restaurant. It makes a very good shredded beef sandwich, especially when served on a homemade hamburger bun!!
