1 tsp instant or active dry yeast
1 1/2 c warm water
4 c all purpose flour
1 tsp kosher salt
1/3 c olive oil

Note: It's best to make this dough at least 24 hours in advance and 3 or 4 days is even better.

Sprinkle yeast over 1 1/2 cups warm (not lukewarm) water. Let stand for a few minutes.

In a mixer, combine flour and salt. With the mixer running on low speed (with the paddle attachment), drizzle in olive oil until combined with flour. Next, pour in yeast/water mixture and mix until just combined and the dough comes together in a sticky mass.

Coat a large bowl with a light drizzle of olive oil. Form the dough into a ball. Put dough in greased bowl and toss to coat in oil. Cover tightly with plastic wrap and let is set for 1 or 2 hours, or store in refrigerator until needed. (Again, it's really best to plan ahead so this dough can sit for a few days.)

When you are ready to make pizza, grab 1/2 of the dough. Squeeze into a nice tightly pulled ball. Then roll out dough with a rolling pin or pull and stretch the dough until it's to the desired thickness--a thinner crust is best. Lay it on a lightly oiled pan. Cover with desired toppings.

Preheat over to 375º and bake for 15 to 20 minutes or until crust is golden brown and toppings are bubbly.

This is one of the easiest and best tasting pizza crusts. It's not "bready" tasting. It has a nice chew and will bake through even with multiple toppings on it. And yes, add the oil first THEN the water, otherwise, you will end up with a greasy unusable mess. If you make the dough ahead, do not "burp" the bowl--in other words, keep the plastic wrap on until you are ready to use as the dough is fermenting and developing flavor while resting. Finally, try something different for toppings--sweet pepper jelly with chunks of ham and a light scattering of crumbled blue cheese or pesto sauce with cooked crumbled sweet Italian sausage and grated Parmesan cheese. The choices are endless!
