Ingredients: For Cookies: 7 c flour 2 t baking powder 2 1/3 c butter or margarine 2 c sugar 4 eggs 1 tsp vanilla
For Icing: 6 tbsp butter or margarine, at room temperature 2 tsp vanilla 1/8 tsp salt 1 lb confectioner's sugar 4 to 5 tbsp milk

Directions:Preheat oven to 350º. Lightly grease cookies sheets or line with parchment paper.
Cream together butter and sugar. Add eggs, one at a time. Add vanilla. Mix together flour and baking powder, then add to sugar mixture. Mix until combined. Roll dough to 1/4 inch thickness and cut into shapes with cookies cutters, or form into 1 inch balls and flatten. Put cookies on prepared cookie sheets and bake for 8 to 10 minutes. Place on cooling racks. Makes 4 to 6 dozen cookies, depending on size.
For icing: Combine butter, vanilla, salt and confectioner's sugar. Mix for 1 minute. Add milk, one tablespoon at a time, until it reaches an appropriate consistency for icing the cookies once they are cooled. Store iced cookies in refrigerator. |

Notes: This is an actual bakery cookie recipe. The dough is forgiving, doesn't have to be chilled before rolling it out, will take a lot of handling and still produce light, tasty cookies. And if you need to make a massive amount of cookies for an event, they can be prepared ahead, frozen (un-iced) between layers of waxed or parchment paper, and thawed with no loss in taste or texture. It's a keeper for making cut-out cookies.
