1 onion chopped
1 teaspoons of garlic
1/2 bell pepper chopped and seeded
1/8 teaspoon cayenne pepper
1/4 teaspoon black pepper
1/2 teaspoon onion powder
1 teaspoon Cajun seasoning
1 whole cut up chicken
1/3 jar roux
12 small red new potatoes, washed and quartered
6 boiled eggs
2-4 cups water
4 green onions diced

Prepare vegetables while the eggs are boiling. Cool and peel eggs, leave whole.

In a heavy magnalite pot or cast iron pot heat canola or vegetable oil over medium heat, add chicken pieces and brown stirring occasionally to keep from sticking. Once the chicken is browned, remove and set aside. In the pot where you cooked the chicken add the onions and bell pepper and saute till onions clarify, then add back your browned chicken pieces, garlic and potatoes and seasonings. Add water and bring to a boil. Once the water is boiling add the roux and stir until evenly dissolved and reduce to a simmer and cover. If your gravy is too thin add a little more roux, if it's too thick add a little more water. Now add your boiled peeled eggs and simmer over a low heat for 20 to 30 minutes, stirring occasionally.

Serve over rice and garish with diced green onions
