1 tablespoon minced shallots

¾ teaspoon dark sesame oil

¾ cup creamy or chunky peanut butter (I use the natural peanut butter)

½ cup water

¼ cup lemon juice


¼ cup soy sauce

2 tablespoons flaked coconut

1 teaspoon dried crushed red pepper (go easy - this is what makes it so hot)

2 cloves garlic, minced

2½ tablespoons brown sugar

Directions:
Cook shallot in sesame oil in a medium saucepan over medium-high heat, stirring constantly, until tender. Add peanut butter and next 6 ingredients, stirring well. Cook over medium-low heat 4 minutes, stirring constantly. Add brown sugar, cover, reduce heat, and simmer 10 minutes, stirring often. Serve warm with fresh crudités. Yield: 2 cups.

For all the times I have shared this recipe I double everything and serve with carrots. This is a fun and enjoyed recipe by all!!
