2 eggs
1 c. milk
7/8 c. unsifted flour
1 T. cooking oil
1/2 tsp. salt

Directions:
Directions:
Mix flour, milk, oil and salt. Beat to the count of 60 with hand beater.
Add 1 egg - Count 20
Add 2nd egg. Count 20

Grease 8 muffin tins or 8 custard cups (I use 1/8 c. in each custard cup).

Set in cold oven at 425º for 35 minutes. Open oven and prick with 2 tined fork to release steam quickly. Close door and turn off heat in oven and let them stand for about 5 minutes in oven with heat off.

To freeze - Place cooled popovers in plastic bag or aluminum foil. To reheat, unwrap, place in 375 oven for 6 to 8 minutes. Will be just like fresh baked.
