1/3 cup dry white wine
1/2 cup water
1 green onion, chopped
2 ribs celery chopped
1/2 tsp. peppercorns
2-6oz. salmon filets
1/4 cup heavy cream
2 tsp. Dijon mustard
salt and pepper
Chopped green onion tops for garnish
Lemon slice in sauce

Directions:
Directions:
Bring water, wine, onions, celery, and peppercorns to a light simmer in a large skillet. Place fish in the skillet and cover. Cook until just done about 8 minutes. In a small sauce pan add the cream and bring to a boil reduce the cream to sauce consistency. Mix in the mustard and season with salt and pepper. Plate salmon and top with sauce and garnish with green onion.
