16 oz. small shells, such as rigati
1/4 c. butter
1/2 c. flour
2 1/2 c. 2% milk
6 slices white American cheese, torn or sliced to bits
1 c. (8 oz.) shredded extra-sharp white Vermont cheddar cheese
1 T. Dijon mustard
1 t. kosher salt
1/4 t. hot sauce

Directions:
Directions:
Cook pasta according to package directions.
Melt butter on low. Whisk in flour and cook 1 minute, stirring constantly.
Gradually whisk in milk. Cook over medium heat, stirring until sauce thickens and bubbles. Remove from heat.
Add cheeses, mustard, salt and hot sauce. Stir until cheeses melt and sauce is smooth.
Stir in pasta and cook over medium heat for 1 minute or until hot.
