1 - package of
pork ribs
3-4 lbs potatoes
1 bag of carrots
1 - 2 jars of sauerkraut

You can add as much of all the ingredients for large meal or small for a small meal. Don't skimp on sauerkraut, that's what makes it so good and juicy.

Directions:
Directions:
Heat oven to 350º. Use a large roaster pan. Gently clean the meat.

Put the country style pork ribs in the large pan first.
Peel and quarter the potatoes and lay along sides of ribs.
Peel and add carrots.
Add about 2 inches of water to the bottom.
salt and pepper your potatoes and carrots.

Cook 2-3 hours until very tender and falling off bone, but not dried out.
Pour sauerkraut over the meat, potatoes, and carrots.
Cook for another 45 minutes.

Take out, let set a few minutes.
Enjoy. This also tastes great the 2nd day!!!

This is a very simple dish to put together. Our family traditionally has it on New Years Day.
You can make a lot or a little.
