1 cup sugar
2/3 cup canned pumpkin
1 teaspoon baking soda
1 teaspoon cinnamon
3/4 cup all purpose flour

Filling:
1 8oz package cream cheese
3/4 teaspoon vanilla
2 Tablespoons butter
1 cup powdered sugar
1/2 cup chopped nuts

Pre heat your oven to 375º and grease a jelly roll cake pan and cover bottom of the pan with a sheet of wax paper. Mix all ingredients for cake together with a whisk. Pour batter onto the wax paper and bake for 15 minutes. DO NOT OVER BAKE! (tip: gently drop cake pan several times on a towel on the counter top to burp the air bubbles from the batter. This will allow the cake to hold together better.)

Remove from oven when timer goes off and invert cake onto a pastry towel that has been sprinkled with powdered sugar. Remove wax paper gently from the cake and roll the cake up in the pastry towel. Place the cake in the refrigerator and allow to cool about 1 to 2 hours. Prepare the filling while the cake is cooling by combining all the ingredients into a bowl and mix well. After cake is cooled roll out and spread the filling and reroll, (the pastry towel is no longer needed). Place cake on platter and sprinkle the top with powdered sugar. May be served with whipped cream.
