Ingredients: canned wild salmon, flaked - 2 C eggs - 3 mayo - 1/4 C sour cream - 1/4 C grated cheddar cheese - 1 C minced onion - 1T minced garlic - 1 small clove or 1t fresh or dried organic dill weed - 1t salt - 1/2 t pepper 1/2 t hot sauce [Louisiana, Frank's or your own!] for crust: 1 C unbleached white or whole wheat flour 1/2t salt 1/2C butter, softened 1 C cheddar cheese, grated 1/4C sliced almonds

Directions:In large bowl mix together: salmon, eggs, mayo, sour cream, onion, garlic, salt, pepper, dill weed, and hot sauce. Mix thoroughly, stir in grated cheddar.
In another bowl mix flour and salt; cut in softened butter. Add grated cheddar and sliced almonds. Reserve about 1/8C of shell mix to sprinkle top of pie (before baking). Press into 9" pie plate.
Bake at 350F for about 45 minutes or until filling puffs up. Remove from oven; serve hot along with any kind of potatoes...mashed, baked or scalloped; all good!....a salad or coleslaw, maybe a hot biscuit?

Notes: I've been making this recipe since my kids were little, when we lived on Hornby Island, BC. A friend gave me her original recipe, but over the years I changed it quite a bit. I always double it and make 2 pies....because one is NEVER enough for my crew, and my company always loves it! Ask Uncle George and Cousin Nic! Enjoy! Love, Aunt Kate
