1 can15 oz. pinto beans (rinsed and drained)
1 can 15 oz. diced tomatoes
1 small zucchini, cut small pieces
1 3/4 c. fresh or frozen corn
1 1/2tsp chili powder
1/2 tsp. cumin
1 tsp. onion and garlic powder....I used fresh
1/2 tsp. salt

polenta topping:
1 c. cornmeal
1/2 tsp. salt,
2 c. water
2 tsp. oil

Directions:
Directions:
Preheat oven 350 degrees.
Combine first 8 ingredients in small pot and cook on low for 40 minutes, stir occasionally.
Combine topping ingredients in pan and bring to boil, stirring occasionally. When boils. lower heat to simmer until thick.
Spread bean mixture in oiled 10 inch pie pans and spoon polenta on top.
Bake 45 minutes.
May serve with shredded cheese.
