2 1/2 pound of meat (liver, kidney, heart, and stew meat)
1 medium onion
1/2 medium bell pepper, chopped
2 stalks celery, chopped
1/4 cup cooking oil
salt, pepper and Cajun seasoning to taste
1/2 cup chopped parsley
1/2 cup green onions
2 teaspoons minced garlic

Cut meats into bite size pieces, season to taste with salt, pepper and Cajun seasoning. Using a heavy pot, Magnalite or cast iron, add cooking oil and preheat the pot lightly. Add vegetables and sweat till onions are clear. Add meat mixture to vegetables and brown on medium heat, stirring occasionally to keep from sticking or burning. Once meat is browned add 1 cup water, stir until you see the gravy begin to form. Now add enough water to make as much gravy as you want, about 2 cups. Add garlic, and cover pot and cook until meats are tender. Stir occasionally to assure even cooking of the meat. Cooking time vary from 45 minutes to an hour. I like to bring mine to a simmer after adding the water and cook on a low fire for the remaining time. Serve over cooked rice.

Tip: at the point you would add the two cups of water you can transfer everything to a warmed crock pot and cook for 4-5 hours on high or 6 on low. The liver will break down the longer it cooks, giving the gravy a very
rich flavor.
