1 pound skinless, boneless chicken breasts
2 cups chicken broth, divided
3 tablespoons olive oil
3 garlic cloves, minced
4 stalks celery, diced
1 medium onion, thinly sliced
2 red or green bell pepper, julienned
6 ounces mushrooms sliced
2 cups bean sprouts
1 (8ou can) water chestnuts, drained
3 tablespoons cornstarch
3 tablespoons soy sauce
1 cup chow mein noodles

Cut chicken into 1 1/2" strips. Heat oil in a large skillet. Add chicken, garlic and onion. Cook until no longer pink. Set aside and keep warm. Add 1/2 cup broth to skillet. Add celery and bell peppers. Stir fry for 4 minutes. Add mushrooms and stir fry for 2 minutes. Stir in sprouts and water chestnuts. Dissolve cornstarch in remaining broth. Mix in soy sauce; stir into skillet. Cook, stirring continually for 3 minutes. Add chicken to skillet. Heat until serving temperature. Serve over low mien noodles or rice.
