Any shape pasta, preferably whole grain, brown rice or quinoa
1 can tomato soup
8 oz. whole milk*
sharp cheddar cheese, at least 8 oz*
Optional wheat germ or ground flax seed

*you can substitute almond or rice milk and non dairy cheese for dairy free version

Preheat oven to 350º
Cook pasta, put in casserole dish and set aside. Mix the milk and the tomato soup together over a low flame. Grate the cheddar cheese into the mix, stirring constantly. When cheese is melted, pour mixture over pasta.
*You can sprinkle wheat germ or ground flax seed over the top for a nice crunch

Bake uncovered for 30-35 minutes until bubbly.

My bubbie cooked this Mac-n-Cheese with velveeta and white pasta. I tweaked her recipe, creating Mac-n-Cheese With Love, by using quinoa/brown rice pasta, organic tomato soup with no sugar, organic cheddar cheese, whole milk and ground flax seeds. My kids love the meal as I honor my bubbie's cooking. I miss you bubbie!!!
