1 Baguette slice into rounds
EVOO for drizzling
Salt and Pepper
4 oz. Blue Cheese, room temperature
2 oz. Cream Cheese, room temperature
1 thinly sliced, Red Onion
1 T. EVOO
1 T. Butter
1/2 t. Kosher Salt
1 t. Sugar
1 T. Balsamic Vinegar
1 bundle fresh Thyme sprigs

Preheat oven to 350º.

Crostini:
Arrange bread slices on baking sheet and drizzle with EVOO, season with salt and pepper. Bake 10 minutes or until lightly toasted.

Blend the blue cheese and cream cheese in a bowl.

Balsamic Onions:
Melt butter and EVOO. Add onions, 1/2 t. of salt and stir well to coat. Reduce heat to medium-low, cover and cook until the onions are soft and translucent, about 10 minutes. Remove cover and continue cooking for about 20 minutes, stirring to prevent sticking.

Add balsamic vinegar, stirring, 2-3 minutes, until the onions are glazed with the vinegar. Remove from heat and cool. Season with salt and pepper.

To assemble Crostini:
Preheat broiler. Spread cheese mixture on each bread round; top with onions and sprinkle with fresh thyme leaves. Broil for 45-60 seconds, or until bubbly.
