1 lb. thick cut peppered Bacon
2 T. Oil
2 c. frozen Hash Browns
1 chopped red Bell Pepper
1 chopped green Bell Pepper
1 lb. store-bought Pizza Dough
12 oz. fresh, sliced Mozzarella
8 lg. Eggs
Salsa
Salt and Pepper

Place the oven rack in the lowest position and preheat to 475º.

Fry the bacon, drain and chop into bite-sized pieces.

Heat 1 T. of oil in large skillet over medium-high heat; add the frozen hash browns and cook until golden brown. Remove from the pan and set aside.

In the same skillet, heat 1 T. of oil and sauté the bell peppers, about 5 minutes. Set aside.

Roll out the pizza dough on a lightly oiled baking sheet. Spread 1/2 cup salsa over the dough and evenly distribute the mozzarella over top. Sprinkle with the hash browns, bell peppers and bacon.

Make 8 wells in the pizza and crack the eggs into the wells. Sprinkle with salt and pepper. Bake until crust is golden brown and the eggs are set but still slightly soft, about 15 minutes. Cut into 8 pieces and serve with the remaining salsa.
