Baby red potatoes
Olive oil
Salt & Pepper
Fresh Herbs
Garlic
Parmesan cheese

Directions:
Directions:
Boil potatoes until fork tender. Preheat oven to 450º. Drizzle olive oil on baking sheet, set potatoes on sheet and using a potato masher, gently smash each potato down, rotating masher both ways (so it looks like a thick cookie. You could probably use a fork as well. Like you would mash down peanut butter cookies) Drizzle olive oil, season with salt & pepper, herbs and garlic. THEN top with grated Parmesan cheese. Bake 20 minutes.
