4 small zucchini diced (about 3 cups)
2 c cracker crumbs
2 T butter
3 eggs
1 small onion chopped
1/2 c milk
1 c cheddar cheese
1/2 t salt
1/2 t pepper

Directions:
Directions:
Bring 4 c water to boil.Add zucchini. Reduce heat, simmer until tender, about 3 minutes. Drain.
Press cracker crumbs in bottom of greased 9" pie plate or 9" square pan. Dot with butter.
Whisk eggs, stir in onion, milk,2/3 c cheese, salt, pepper. Pour over zucchini. Sprinkle with the rest of the cheese. Bake uncovered for 35 minutes at 350º.
