Ingredients:
Ingredients:
10 eggs
1/2 cup milk
16 oz refrigerated breakfast biscuits
***DO NOT COOK FIRST***
4 scallions
1 cup shredded extra sharp cheddar cheese
cooked bacon or cooked sausage

Directions:
Directions:
Preheat oven to 350º, then grease a 11 x 17 pan with cooking spray. Mix eggs and milk in a large bowl. Cut each biscuit into fours and drop into egg mixture. Adding the biscuits to the eggs at this point allows them to soak up the eggs. Cut up scallions and break up bacon or sausage into bite size pieces. Add everything to the bowl of eggs and biscuits. Mix it all up and pour into the pan. Bake at 350 º for 25 - 30 minutes, closer to 30 so it isn't runny.

Tip: if you want to make this the night before leave it in the mixing bowl and cover with saran wrap. In the morning, give it a good stir then pour into prepared baking dish and bake as directed.
