6 slices thick cut bacon
I pound of boneless skinless chicken breasts
1/4 cup butter
1/4 cup flour
2 teaspoons garlic powder
1 teaspoon cayenne pepper
1 teaspoon smoked paprika
1 teaspoon salt
1 teaspoon pepper
1 cup beer, Belgian style wheat beer (Blue Moon) works best
1 cup chicken stock
2 cups half and half
8 ozs mild cheddar cheese, shredded
1 teaspoon Worcestershire sauce
chives for garnish
croutons if desired

Warm an 8 quart pot over high heat. Dice bacon and add to pot, cook till lightly crisp, stirring occasionally.

Cut chicken breasts into bite size chunks.

Remove bacon from pot, add chicken to bacon grease to cook. Stir occasionally until chicken is cooked through. Remove chicken and set aside with bacon.

Cut butter up and add to bacon drippings, whisk in flour and spices. Add beer, chicken stock, and half and half. Whisk to combine and bring to a simmer. Add cheese and whisk to combine, stir until you have a smooth mixture. Add Worcestershire sauce, chicken and bacon.

Allow to simmer until ready to serve, stirring occasionally
