1/4 cup oil
1 cup brown sugar
2 eggs
1 tsp vanilla
1 3/4 cup flour
1 tsp baking soda
1/2 tsp salt
3 bananas, mashed
4 Tbsp buttermilk (or sour cream or yogurt)

Directions:
Directions:
Preheat oven to 350º.

Stir together oil and brown sugar, combining well. Add eggs and vanilla. Add flour, baking soda, and salt, stirring just until combined. Fold in mashed banana and buttermilk. Pour into 2 greased loaf pans.

Bake for approximately 40 minutes.

Optional Topping: Heat in small saucepan and cook until thick enough to pour over the cooked bread. Broil a couple of minutes.
6 Tbsp butter
10 Tbsp brown sugar
5 Tbsp milk
1/2 cup of finely chopped pecans (this is a personal preference)
