2 1/2 cups sugar
1 cup oil
3 eggs
2 tablespoons poppy seeds
1 1/2 teaspoons vanilla
1 1/2 teaspoons almond extract
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1 1/2 cups milk
3 cups flour

Directions:
Directions:
Cream together, oil, sugar and eggs. Stir in the poppy seeds, extracts, salt and baking powder. Alternate adding in the flour and milk. Mix until all ingredients are combined. For Texas size muffins, bake at 375º for 20-25 minutes. For regular size muffins, bake at 400º for 15-20 minutes.

Alternative: Lemon Poppy Seed Muffins - add in zest of 2 lemons and omit the almond extract.
