5 lb. carrots
10 green peppers
3 doz. cucumbers (I used unpeeled zucchini to make the same quantity)
6-8 onions
1 c. canning and pickling salt
1 qt. vinegar
2 qt. sugar
2 T. mustard seed
2 T. celery seed
1 teas. tumeric
Pint jars for canning
The quantities of each vegetable is to your own taste. Add something else or take something out.

What is great about this recipe is you can use any vegetables that you like. Grind up vegetables, put in large container and add 1 cup canning salt and 2 gallons water. Set overnight, drain off juice and rinse well or it will be salty. Add the vinegar, sugar, mustard seed, celery seed and tumeric to the ground up vegetables. Cook until it isn't runny any longer (at least 1/2 hour). Put into sterilized jars, seal and process in water bath for 15 minutes.
