1/2 lb. lean ground beef
1 onion, finely chopped
1/4 tsp. garlic powder
1 jar spaghetti sauce
1 1/2 cup Ricotta cheese, or dry cottage cheese
1/2 cup grated Parmesan cheese, divided
1 egg, lightly beaten
4 zucchini, cut in half lengthwise, then sliced into 1/8-inch slices
1 cup shredded part-skim mozzarella cheese

Brown the beef, onion, & garlic powder together. Drain excess grease. Stir in spaghetti sauce. Set aside. In a bowl, combine ricotta cheese, 1/4 cup Parmesan cheese, & egg; mix well. Spray a 13"x9"x2" baking pan with nonstick cooking spray. Place 1/2 of the zucchini in the pan, then layer 1/2 the cheese mixture & 1/2 the meat sauce on top. Repeat layers. Top with mozzarella cheese & 1/4 cup Parmesan cheese. Bake one hour in a preheated 350º oven.
