4 to 5 large onions (4-5 cups minced)
3 T. butter or margarine
1/4 tsp. peppercorns, coarsely crushed
1 T. flour
3 cans (10 1/2 oz. ea.) condensed beef broth
3 cups water
1 bay leaf
6 to 8 slices French bread, toasted
1/2 cup grated Swiss cheese

Directions:
Directions:
Slice onions and mince them.
Heat butter or margarine in saucepan over medium heat. Add onions and peppercorns.
Cook, stirring frequently, until onions are light brown. Sprinkle onions with flour. Cook 1 min., stirring constantly.
Add beef broth, water and bay leaf and bring to boil. Simmer 30 to 40 min.
Discard bay leaf.
Pour soup into oven proof soup bowls. Place toast slices on top and sprinkle with cheese.
Place under broiler or in 400º oven until cheese turns golden.
Makes 6 to 8 servings.
