This makes about 4 Cups – 2 1/2 Mason Jars

1 Stick (8 oz, 1 Cup) Butter
1 Cup Heavy Cream
1/2 Cup Mascarpone Cheese
1/2 Cup Cream Cheese
2 Cups, equal parts, Freshly Grated Romano, Parmesan and Asiago Cheese Mix.
1 Tablespoon Freshly Ground White Pepper
1 Teaspoon Garlic Powder
White Wine, as needed (about 1/2 Cup)

1. In a 3 Quart saucepan, warm the butter, mascarpone and cream cheese over low heat while stirring constantly.
2. Add the pepper and garlic powder and stir some more.
3. Add the hard cheeses, a little at a time, and stir until melted, this could take up to 10 minutes.
4. Add the Heavy Cream, stirring as you go.
5. Thin with white wine if needed, up to about 1/2 cup, and continue to stir.
> > > Total stirring time can be up to 20 minutes – but it's worth it.
6. Toss with Fettuccini (or your choice of pasta) to combine and serve immediately.
7. This should freeze well.
