4 Large Red (or Yellow) Bell Peppers
2 Tablespoons GOOD Olive Oil

Small Batch
1 Large Red (or Yellow) Bell Pepper
2 teaspoons GOOD Olive Oil

Directions:
Directions:
1. Preheat the oven to 500 degrees.
2. Cut the pepper (peppers) in half.
3. Remove the stem, seeds and ribs and discard.
4. Place the pepper(s) on a sheet pan and place in the oven for 20-30 minutes, until the skin is completely wrinkled and charred, checking every 10 minutes.
5. Place the roasted pepper in a paper bag and seal it with a bag clip.
6. Steam for 30 minutes, or until the peppers are cool enough to handle.
7. Remove the peel(s) (or not) and place the pepper(s) in a bowl, retaining any juices.
8. Pour the oil over the pepper(s).
9. Refrigerate for up to 2 weeks or freeze indefinitely.
