1 pint grape tomatoes
1 ripe avocado
2 ears sweet corn
2 Tbsp cilantro

Dressing:
1 lime
3 Tbsp veg oil
1 Tbsp honey
sea salt and cracked pepper
1 clove garlic, minced

Directions:
Directions:
Grill corn over medium heat 10 minutes or until tender, al dente.
Cut corn off the cob and scrape juice off the cob with the back of the knife - cool.
Dice tomatoes.
Dice Avocado.
Chop cilantro.

Dressing:
Juice lime.
Whisk all ingredients.

Toss all ingredients. Let sit 10-15 minutes for dressing to mellow.
