1 Cup Cooked Chickpeas
¼ tsp. Baking Soda
½ tsp. Sea Salt
2 Cloves Garlic, crushed with a pinch of salt
¼ Cup Fresh Lemon Juice, or Concentrated Lemon Juice to taste
2 Tbsp. Sesame Paste
2 Tbsp. Parsley, finely chopped
½ tsp. Ground Cumin
Sumac to garnish
Olive Oil to garnish

Pre-soak chickpeas in cold water over night. Rinse well and drain. Place chickpeas in a pot, cover with water. Stir in a dash of baking soda (about ¼ tsp.) and set aside for ½ hour. Place pot on stove and bring to a boil over high heat. Add 1 cup cold water, lower heat and cook for 1 hour or until tender. Skim foam while cooking if necessary. Drain warm chickpeas; reserve some of the water (1 Tbsp. or more). Beat chickpeas in food processor or blender with some of the reserved water until well blended. Blend chickpeas with sesame paste, lemon juice, crushed garlic and salt into a purée. Adjust flavor and consistency with lemon juice, water and salt if necessary (Hummus should be thick and smooth).
Serve garnished with olive oil and Sumac.

Hummus is something I never tasted or even heard of in childhood, but I'm sure that my mom (Darleen Maxon) would have loved it. I hope you enjoy the recipe!
